This weekend at the Lokey household was a time to revitalize and try some new creations of mine to try our best to eat better and add more vegetables. It was great 80 degree weather and all the windows and doors were open to air and the sunlight poured in all weekend. I, the foodie I am got to relax a little and watch the food network and make up some good recipes.

I don’t get to really cook new recipes or experiment during the week so I take my Sunday’s as a time to enjoy one of my favorite hobbies.

This week’s work consisted of me trying to do something with my vegetables that I had gotten great deals on at Fry’s grocery and use up some quinoa (keen-wa) that has been asking to be used up in my pantry.

So I put together this vegetable dish:

What you need:

1 cup of quinoa
1 chopped zucchini
1 cup of onions
1 cup of chopped mushrooms (any kind you like)
1 green bell pepper chopped
1 chopped medium tomato
2 tablespoons of Worcestershire sauce (yum!)
2 tablespoons approx of olive oil
1 teaspoon of garlic spice or couple of cloves of garlic minced
salt and pepper to taste

In a pot throw in the quinoa with the water and boil, then simmer per the directions until they fluff up
and set aside

Next, with the zucchini I put it into a mixing bowl and tossed it with a pinch of salt and the garlic and about 1/4-1/2 teaspoon of the olive oil to make sure the garlic stuck then put aside

Then, I sauteed the onions and caramelized them with the olive oil and Worcestershire sauce until nicely browned and smelled of the wonderful sauce

I then threw in the zucchini sauteed until a bit softened before adding my chopped mushrooms and bell pepper.

Saute until the mushrooms and bell peppers are well cooked.

Last but not least throw in your tomatoes just to warm them up a bit don’t overcook them!

Then toss in the quinoa, plate and enjoy!!!

Its great to eat on its own, or as a side with grilled chicken!

It tasted great and it was a great way to get lots of vegetables on the plate!

Remember all in moderation, start slow and have fun doing it!!!
